Hi, I’m The Weegie Veggie

Around 15 years ago, I decided to switch to a plant-based diet.

At the time, I had absolutely no idea what I was going to eat for the rest of my life. I just knew one thing: I didn’t want meat on my plate anymore.

The difficult part wasn’t giving up meat itself. I never found myself craving burgers or bacon. The difficult part was figuring out what to cook instead.

Like many people, I had grown up with meals where meat was the centrepiece and everything else revolved around it. Suddenly, I had to rethink the way I approached food altogether.

Thankfully, I had picked up some useful experience working in professional kitchens while studying at university. I worked in a couple of restaurants, and although my time there was relatively short, I learned valuable tips and techniques from professional chefs that stayed with me long after I left.

So I began experimenting.

I started creating my own weekly menus, determined that my dinners weren’t going to consist of lettuce, plain vegetables or beans on toast. I’m a food lover, and for me, the food always has to be good.

Nature has given us tens of thousands of edible plants to choose from. Surely there had to be more out there than the handful of ingredients most of us rely on every week.

At first, it wasn’t easy.

But it became easier because I had made up my mind. I wasn’t going back, so I needed to find recipes and ideas that could replace the “star of the plate” and turn vegetables, grains, pulses and plant-based ingredients into meals worth looking forward to.

Fast forward 15 years, and that’s how this blog was born.

I’m a Glaswegian vegetarian who has spent the last decade thinking about sharing my food journey, favourite recipes and kitchen discoveries with others.

Why I Love Cooking

Cooking has always been a passion of mine.

I love the organised chaos of a busy kitchen. I love planning meals, juggling timings and bringing everything together at exactly the right moment.

I love the ingredients themselves too.

The smell of fresh basil.

The sharp scent of lemons.

The bright red colour of strawberries sitting on the kitchen counter.

Food has always fascinated me, and over the years I’ve built up a collection of recipes that make up my own weekly menu. Recipes that I’ve cooked, adapted and returned to time and time again.
